Casa Chimayo Restaurante

Established in 2011, Casa Chimayo made a name for itself using a traditional approach with fresh local ingredients to showcase recipes developed by our grandmothers over generations. New Mexican cuisine, or as Don Timoteo refers to it, “comida de  Nueva España” has evolved from a blending of Spanish and Native American culture, ingredients, and traditions, resulting in a culinary experience like no other.  

The menu still includes authentic New Mexican delicacies such as:  red and green chile, posole, chile rellenos, green chile stew, tamales.  Some of Chef’s additions include: rack of lamb, shrimp enchiladas, cochinita pibil, and pato en mole rojo.  Chef has not only expanded the menu, but also elevated it.  But now, as always, each plate is prepared “homestyle”—using Abuelita’s recipes and much love!
